Welcome back to our new Cooking Corner! This is our second of the series and this time we are welcoming Barb, the Treasurer of IWP. We are going to learn how to make a perfect holiday starter.
A starter has the power to set the tone for the rest of the meal and with this eye-catching, tasty salad this is sure to do the trick! We are going to learn how to make a Christmas Spinach Salad. As we continue to build our community online, cooking brings all of us together. It is a way for us to take a step back from technology and try new recipes.
There are a few different aspects to this salad and Barb walks us through all of those steps in the video (below).
- 1 package baby leaf spinach
- 1/2 cup dried cranberries
- 1/2 cup candied walnuts
- 4 oz. goat cheese, rolled into small balls
Before the salad assembly, the vinaigrette and the candied walnuts need to be prepared…
|FOR THE VINAIGRETTE* 1/3 cup raspberry (or other) vinegar 1/4 cup olive oil 3 teaspoons sugar 2 teaspoons Dijon mustard 1 teaspoon sea salt *Put all ingredients into jar and shake vigorously|
